Description

A warm, saucy dinner of chicken cooked with sun-dried tomatoes, garlic, and cream in a slow cooker, perfect for busy evenings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tsp Italian seasoning
  • ½ tsp onion powder
  • Kosher salt and black pepper, to taste
  • 2 cloves garlic, minced
  • ½ cup sun-dried tomatoes, drained and chopped
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup baby spinach, chopped

Instructions

  1. Season both sides of the chicken breasts with Kosher salt, black pepper, Italian seasoning, and onion powder. Rub the minced garlic onto each piece and let it rest.
  2. Spray the slow cooker insert lightly with cooking spray or add a tablespoon of oil. Place the seasoned chicken breasts in a single layer.
  3. In a bowl, whisk together the chicken broth, heavy cream, chopped sun-dried tomatoes, and half of the Parmesan cheese. Pour over the chicken.
  4. Cover and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours until the chicken reaches 165 F.
  5. Once cooked, stir in the chopped spinach, cover for 5 minutes to wilt the spinach.
  6. Shred the chicken or leave it whole, stir in the remaining Parmesan, taste and adjust salt and pepper, and serve over your choice of sides.

Notes

For a different texture, sear the chicken first for color. If cooking time is uncertain, always check at the lower end.
