Description
A warm, saucy dinner of chicken cooked with sun-dried tomatoes, garlic, and cream in a slow cooker, perfect for busy evenings.

- 4 boneless, skinless chicken breasts
- 2 tsp Italian seasoning
- ½ tsp onion powder
- Kosher salt and black pepper, to taste
- 2 cloves garlic, minced
- ½ cup sun-dried tomatoes, drained and chopped
- ½ cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup baby spinach, chopped
Instructions
- Season both sides of the chicken breasts with Kosher salt, black pepper, Italian seasoning, and onion powder. Rub the minced garlic onto each piece and let it rest.
- Spray the slow cooker insert lightly with cooking spray or add a tablespoon of oil. Place the seasoned chicken breasts in a single layer.
- In a bowl, whisk together the chicken broth, heavy cream, chopped sun-dried tomatoes, and half of the Parmesan cheese. Pour over the chicken.
- Cover and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours until the chicken reaches 165 F.
- Once cooked, stir in the chopped spinach, cover for 5 minutes to wilt the spinach.
- Shred the chicken or leave it whole, stir in the remaining Parmesan, taste and adjust salt and pepper, and serve over your choice of sides.
Notes
For a different texture, sear the chicken first for color. If cooking time is uncertain, always check at the lower end.
