Ingredients

- 4 chicken breasts
- 2 lemons (zested and juiced)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup rice
- Fresh parsley (for garnish)
Instructions
- In a slow cooker, combine the lemon juice, lemon zest, olive oil, garlic, thyme, oregano, salt, and pepper.
- Add the chicken breasts and coat them well with the marinade.
- Pour the chicken broth over the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- About 30 minutes before serving, add the rice to the slow cooker and gently stir it in.
- Once the rice is cooked, fluff it with a fork and serve the chicken on top.
- Garnish with fresh parsley before serving.
Notes
Use bone-in chicken for deeper flavor. Fresh herbs can be added for brightness at the end of cooking.
