- 1.5 lbs boneless, skinless chicken breasts
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 cups baby spinach, chopped
- 1 cup orzo pasta, uncooked
- Salt and pepper to taste
Instructions
- In a slow cooker, place the chicken breasts, diced onion, minced garlic, and chopped sun-dried tomatoes.
- Pour in the chicken broth, heavy cream, and season with oregano, thyme, salt, and pepper. Stir gently.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
- About 30 minutes before serving, stir in the uncooked orzo and baby spinach.
- Cover and cook until the orzo is tender.
- Before serving, sprinkle with grated Parmesan cheese and stir until melted.
Notes
Use real butter for added flavor. If using sun-dried tomatoes packed in oil, drain some oil before chopping. Freshly grated Parmesan is recommended for the best texture.
