- 1 pound ground beef
- 4 cups diced potatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess grease.
- In a slow cooker, layer the diced potatoes at the bottom.
- Add in the cooked ground beef, kidney beans, black beans, and diced tomatoes. Stir gently.
- Sprinkle the ranch seasoning mix over the top and stir to distribute the flavor.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the potatoes are tender.
- About 30 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
- Season with salt and pepper to taste before serving.
Notes
For a crunchy finish, consider broiling the casserole after adding cheese. This dish is best served in the center of the table for family-style dining.
