- 3 lbs beef short ribs (bone-in)
 - 2 chopped onions
 - 3 large carrots (cut into big chunks)
 - 4 cloves garlic (minced)
 - 2 tbsp tomato paste
 - 1 cup balsamic vinegar
 - 2 cups beef broth
 - 2 tbsp brown sugar
 - 1 tbsp Worcestershire sauce
 - 1 tsp salt
 - 1 tsp black pepper
 - 2 sprigs fresh rosemary or thyme (or both)
 
Instructions
- Brown the short ribs in a skillet until crusty on all sides (optional).
 - Place the browned short ribs into the slow cooker.
 - Scatter in the chopped onions, carrots, minced garlic, and tomato paste.
 - Pour in the balsamic vinegar and beef broth.
 - Add Worcestershire sauce, brown sugar, and sprinkle with salt and pepper.
 - Top with fresh herbs.
 - Cover and cook on low for 480 minutes or high for 300 minutes.
 - Serve over mashed potatoes, polenta, or with crusty bread.
 
Notes
For deeper flavors, prepare a day in advance and refrigerate overnight. Skim off any fat before reheating.
