Description

Tender and flavorful balsamic short ribs cooked effortlessly in a slow cooker, perfect for holiday dinners.


Ingredients

Scale
  • 3 lbs beef short ribs (bone-in)
  • 2 chopped onions
  • 3 large carrots (cut into big chunks)
  • 4 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 1 cup balsamic vinegar
  • 2 cups beef broth
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 sprigs fresh rosemary or thyme (or both)

Instructions

  1. Brown the short ribs in a skillet until crusty on all sides (optional).
  2. Place the browned short ribs into the slow cooker.
  3. Scatter in the chopped onions, carrots, minced garlic, and tomato paste.
  4. Pour in the balsamic vinegar and beef broth.
  5. Add Worcestershire sauce, brown sugar, and sprinkle with salt and pepper.
  6. Top with fresh herbs.
  7. Cover and cook on low for 480 minutes or high for 300 minutes.
  8. Serve over mashed potatoes, polenta, or with crusty bread.

Notes

For deeper flavors, prepare a day in advance and refrigerate overnight. Skim off any fat before reheating.
