Description

Deliciously versatile Slice and Bake Cookies that you can customize with various mix-ins, perfect for busy weeknights.


Ingredients

  • 125 g butter (softened)
  • 1/2 cup (110g) white sugar
  • 1/2 cup (100g) brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups (280g) plain flour
  • 2 Tablespoons cornflour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Mix-ins: 3/4 cup chocolate chips, 1/4 cup dark chocolate chunks, 1/4 cup milk chocolate chunks, 1/4 cup white chocolate chunks, 1/2 cup dried cranberries, 1/2 cup white chocolate chips, 1/2 cup chocolate chips, 1/2 cup chopped walnuts, 1/2 cup dried apricots (finely chopped), 1/2 cup dark chocolate chunks, 3/4 cup sprinkles, 3/4 cup M&M’s, 1/2 tsp cinnamon, 1/2 tsp ground cardamom, 1/4 tsp ground ginger, 1/8 tsp ground cloves, 1/2 cup white chocolate chips, 1/3 cup poppy seeds, Zest from 1 lemon

Instructions

  1. Cream the butter and sugars until light and fluffy.
  2. Add the egg and vanilla extract, then mix until combined.
  3. Gradually add the flour, cornflour, baking powder, and salt; mix on low speed.
  4. Add your chosen mix-ins and incorporate into the dough.
  5. Shape the dough into two rolls, wrap in plastic wrap, and chill in the fridge for at least 2 hours.
  6. Preheat the oven to 180°C/350°F.
  7. Slice the chilled dough into 1-centimeter thick pieces and place on a lined baking tray.
  8. Bake for 8-10 minutes until the edges are golden brown.
  9. Cool on the tray for 5 minutes before transferring to a cooling rack.
  10. Store in an airtight container for up to one week.
