Description
A comforting and easy shepherd’s pie casserole made in a crock pot, perfect for hungry families.
Ingredients

- 1 lb ground beef
 - 1 onion, rough chopped
 - 2 cups mixed vegetables (frozen or fresh)
 - 2 cans cream of mushroom soup
 - 4 cups mashed potatoes (prepared or homemade)
 - 1 cup shredded cheese (optional)
 
Instructions
- Brown the ground beef with the chopped onion in a skillet until cooked through; drain.
 - Transfer the beef and onion mixture to a crock pot.
 - Add the mixed vegetables on top of the beef.
 - Pour the cream of mushroom soup over the mixture without mixing.
 - Spread the mashed potatoes on top, smoothing it out.
 - If desired, sprinkle shredded cheese on top.
 - Cook on low for 4 hours or until bubbly around the edges.

This recipe is versatile; you can use leftovers or substitute with other proteins or veggies as preferred.
