Description

A comforting and easy shepherd’s pie casserole made in a crock pot, perfect for hungry families.


Ingredients

  • 1 lb ground beef
  • 1 onion, rough chopped
  • 2 cups mixed vegetables (frozen or fresh)
  • 2 cans cream of mushroom soup
  • 4 cups mashed potatoes (prepared or homemade)
  • 1 cup shredded cheese (optional)

Instructions

  1. Brown the ground beef with the chopped onion in a skillet until cooked through; drain.
  2. Transfer the beef and onion mixture to a crock pot.
  3. Add the mixed vegetables on top of the beef.
  4. Pour the cream of mushroom soup over the mixture without mixing.
  5. Spread the mashed potatoes on top, smoothing it out.
  6. If desired, sprinkle shredded cheese on top.
  7. Cook on low for 4 hours or until bubbly around the edges.
