Ingredients

  • 1 cup rolled oats
  • 2 cups water or vegetable broth
  • 1 ripe avocado, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon olive oil
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped green onions
  • 1 tablespoon lemon juice
  • Optional toppings: poached egg, red pepper flakes, cilantro

Instructions

  1. In a medium saucepan, bring the water or vegetable broth to a boil.
  2. Stir in rolled oats and salt; reduce heat to low and simmer for about 5 minutes, stirring occasionally, until the oats are cooked.
