Instructions

  1. Preheat oven to 425°F. Spread tater tots on a rimmed baking sheet and bake for 18 to 22 minutes until golden and crisp, turning halfway through.
  2. Fry bacon in a skillet over medium heat until browned and crisp; transfer to paper towels and chop into bite-size pieces.
  3. Whisk eggs with a pinch of salt and pepper; cook gently in butter on medium-low heat until soft curds form, stopping when eggs still look glossy.
