Ingredients

  • 1 teaspoon vanilla extract
  • Powdered sugar for rolling

Instructions

  1. In a mixing bowl, combine the flour, cocoa powder, baking powder, and salt. Stir until well blended.
  2. In another bowl, mix the vegetable oil and granulated sugar until well combined.
  3. Crack the eggs into the mixture, adding the red food coloring and vanilla extract, then mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized amounts of dough and roll them into balls, then roll each ball in powdered sugar.
  8. Place the balls on the baking sheets with space between them.
  9. Bake for 12-15 minutes, or until edges are set and centers are slightly soft.
  10. Allow cookies to cool on baking sheets for a few minutes before transferring to a wire rack.
