Instructions
- In a mixing bowl, combine the flour, cocoa powder, baking powder, and salt. Stir until well blended.
- In another bowl, mix the vegetable oil and granulated sugar until well combined.
- Crack the eggs into the mixture, adding the red food coloring and vanilla extract, then mix until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Chill the dough in the refrigerator for about 30 minutes.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized amounts of dough and roll them into balls, then roll each ball in powdered sugar.
- Place the balls on the baking sheets with space between them.
- Bake for 12-15 minutes, or until edges are set and centers are slightly soft.
- Allow cookies to cool on baking sheets for a few minutes before transferring to a wire rack.
