Description

Delightful and colorful sugar cookies that evoke the warmth of family traditions and shared moments in the kitchen.


Ingredients

Scale
  • ¾ cup butter (room temperature)
  • 1 ½ cups granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg (room temperature)
  • 1 tbsp cornstarch
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 cups all-purpose flour
  • ½ cup rainbow sprinkles

Instructions

  1. In the bowl of a stand mixer, beat the butter and sugar on medium speed for about 2 minutes until light and fluffy.
  2. Add in the vanilla extract and egg, mixing until just combined.
  3. Gradually add in cornstarch, baking soda, baking powder, salt, and flour, mixing until well incorporated.
  4. Add in rainbow sprinkles and mix on low until evenly distributed.
  5. Line a baking sheet with parchment paper. Scoop about 2 ½ tablespoons of dough per cookie onto the prepared pan, spacing them about 2 inches apart.
  6. Cover the pan with plastic wrap and chill the dough balls for 30 minutes.
  7. Preheat the oven to 350 degrees F and line two baking sheets with parchment paper again.
  8. Arrange 5-6 dough balls on the baking sheets and bake for 10-12 minutes until the edges are just set.
  9. If desired, use a round cookie cutter to shape them while they are still warm. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra softness, add a slice of bread to the container when storing cookies. These cookies can be frozen for future baking.
