Description

A comforting and quick meal of stir-fried noodles and vegetables, perfect for busy weeknights.


Ingredients

  • 8 oz chow mein noodles
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Cook the chow mein noodles according to package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  4. Add the mixed vegetables and stir-fry for 2-3 minutes until they are crisp-tender.
  5. Add the cooked noodles to the skillet along with the soy sauce, salt, and pepper. Toss everything together and cook for another 2-3 minutes until heated through.
  6. Serve hot, garnished with green onions if desired.

Notes

Use fresh ginger for the best flavor. Frozen mixed vegetables work fine if drained well. For a gluten-free option, use tamari instead of soy sauce.
