- 1 cup fresh pumpkin, cubed
- 1 cup pumpkin puree
- 1 lb lean ground beef
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a splash of olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened.
- Toss in the ground beef, cooking until browned.
- Stir in the pumpkin cubes and pumpkin puree.
- Add the kidney beans and black beans, then sprinkle in the vegetable broth, chili powder, cumin, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 90 minutes, stirring occasionally.
- Adjust seasoning as necessary and serve hot.
