Description

A delicious and healthy twist on the classic beef and broccoli, perfect for paleo diets using a slow cooker.


Ingredients

  • 1 lb flank steak, thinly sliced
  • 2 cups broccoli florets
  • 1/4 cup coconut aminos
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp arrowroot powder
  • 1 cup beef broth
  • Red pepper flakes (optional)
  • Additional vegetables (snap peas, carrots, mushrooms, optional)

Instructions

  1. In a bowl, combine the sliced beef with coconut aminos, garlic, ginger, and arrowroot powder. Let marinate for 10 minutes.
  2. Place the beef mixture in the slow cooker along with the beef broth.
  3. Cook on low for 4 to 5 hours or high for 2 to 3 hours.
  4. During the last hour of cooking, add the broccoli florets.
  5. Serve over cauliflower rice or zoodles.

Notes

Thinly slicing the beef across the grain is crucial for tenderness. If you want a thicker sauce, mix more arrowroot powder with water and stir it in at the end.
