Description
A delicious and healthy twist on the classic beef and broccoli, perfect for paleo diets using a slow cooker.
Ingredients
Scale

- 1 lb flank steak, thinly sliced
 - 2 cups broccoli florets
 - 1/4 cup coconut aminos
 - 2 cloves garlic, minced
 - 1 tsp ginger, minced
 - 1 tbsp arrowroot powder
 - 1 cup beef broth
 - Red pepper flakes (optional)
 - Additional vegetables (snap peas, carrots, mushrooms, optional)

Instructions
- In a bowl, combine the sliced beef with coconut aminos, garlic, ginger, and arrowroot powder. Let marinate for 10 minutes.
 - Place the beef mixture in the slow cooker along with the beef broth.
 - Cook on low for 4 to 5 hours or high for 2 to 3 hours.
 - During the last hour of cooking, add the broccoli florets.
 - Serve over cauliflower rice or zoodles.

Notes
Thinly slicing the beef across the grain is crucial for tenderness. If you want a thicker sauce, mix more arrowroot powder with water and stir it in at the end.
