Ingredients

  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. In a large pot, sauté the onion, garlic, and bell pepper until softened.
  2. Add the shredded chicken, corn, diced tomatoes, chicken broth, and spices. Stir gently to combine.
  3. Bring to a boil and then reduce to a simmer for about 20 minutes to allow flavors to meld.

Notes

Use real butter for the best flavor. Rotisserie chicken can save time. For a lighter option, swap heavy cream with half-and-half.
