A cozy, crowd-pleasing side dish that combines wild rice, pecans, and maple syrup, perfect for holiday gatherings.
Ingredients

- 1 cup wild rice blend
- 1/2 cup pecans, chopped
- 1/4 cup real maple syrup
- 1/2 cup dried cranberries
- 1/2 cup chopped onions
- 1/2 cup diced celery
- 2 cups vegetable broth
- 2 tablespoons butter
- Salt, to taste
- Fresh thyme or parsley (optional)
Instructions
- Lightly spray the inside of a slow cooker.
- Add the wild rice blend, onions, diced celery, and most of the pecans into the slow cooker.
- Stir in the dried cranberries and maple syrup.
- Pour in the vegetable broth and add the butter and a sprinkle of salt.
- Mix gently, then cover and cook on low for 3 to 4 hours, checking after 3 hours for doneness.
- Before serving, sprinkle reserved pecans on top.
Notes
This pilaf tastes even better the next day and can be made ahead of time. To reheat, add a splash of broth or water.
