Ingredients

- 1.5 to 2 lbs boneless, skinless chicken thighs or breasts, cut into chunks
 - 2 carrots, chopped
 - 2 celery stalks, chopped
 - 1 yellow onion, chopped
 - 1 zucchini, chopped (optional)
 - 1 cup mushrooms, sliced (optional)
 - 4 cups low-sodium chicken broth
 - Salt, to taste
 - Black pepper, to taste
 - 4 cloves garlic, minced
 - 1 tsp dried rosemary
 - 1 tsp dried thyme
 - 1 splash of lemon juice
 - Fresh spinach (for finishing, optional)
 - Sliced green onions or fresh parsley (for garnish)
 
Instructions
- In a crock pot, combine the chicken, carrots, celery, onion, zucchini, and mushrooms.
 - Season with salt, pepper, garlic, rosemary, and thyme.
 - Pour in the chicken broth and add a splash of lemon juice.
 - Cover and cook on low for 6-7 hours or on high for 4 hours.
 - Once cooked, stir and taste for seasoning before serving.
 - For a finishing touch, add fresh spinach and a squeeze of lemon right before serving.
 
Notes
Stews taste better the next day as the flavors meld together. Store in the fridge for about four days or freeze for later use.
