- 2 pounds Yukon gold or russet potatoes, peeled and chopped

- 4 cups chicken or veggie broth

- 4 slices bacon, cooked and crumbled
- 1 cup heavy cream or milk
- 1 teaspoon salt

- 2 tablespoons butter
Instructions
- Place potatoes, onion, garlic, and broth in the crock pot. Cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, use a potato masher to smash the potatoes right in the slow cooker, leaving some chunks for texture.
- Stir in cream cheese, cheddar, and heavy cream until well combined and creamy.
- Add butter, mixing until melted and incorporated.
- Season with salt, pepper, and thyme to taste. Serve hot with desired toppings.
