Description

A simple and delicious lemon herb chicken recipe made in the crock pot, perfect for busy weeknights.


Ingredients

  • 4 chicken breasts or thighs
  • 1 large lemon, juiced
  • 2 teaspoons dried thyme
  • 2 teaspoons dried parsley
  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Place the chicken in a crock pot.
  2. Squeeze lemon juice over the chicken and remove seeds.
  3. Add thyme, parsley, olive oil, garlic, salt, and pepper.
  4. Mix to coat the chicken in the herbs and lemon juice.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Check for doneness by pulling apart with a fork; if it shreds easily, it’s ready.
  7. Optional: Add extra lemon juice or broth for more flavor before serving.

Notes
