Description

Delightful lemon-packed brownies that provide a ray of sunshine with every bite.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice
  • Powdered sugar for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Melt the butter in a large bowl and mix in the sugar until combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest and lemon juice.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry mixture to the wet mixture until just combined.
  7. Pour the batter into the prepared dish and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow to cool before glazing with powdered sugar mixed with lemon juice.

Notes

Try using limes if you’re out of lemons or add fresh berries for a twist. These brownies get better after a night in the fridge.
