- 2 cups Heavy Whipping Cream, very cold, divided
- 4 oz Cream Cheese, full-fat, softened
- ½ cup Powdered Keto Sweetener
- ⅓ cup Unsweetened Cocoa Powder
- 1 ½ teaspoons Vanilla Extract
- ¼ teaspoon Salt
- ½ teaspoon Instant Espresso Powder (optional)
- Sugar-Free Chocolate Chips or Shavings (optional, for garnish)
Instructions
- Pour 1 ½ cups of the very cold heavy whipping cream into a large, chilled bowl.
- Use an electric mixer to beat until stiff peaks form.
- Set aside.
- In a separate medium bowl, combine softened cream cheese, powdered sweetener, cocoa powder, vanilla extract, salt, and optional espresso powder.
- Add the remaining ½ cup of heavy whipping cream.
- Beat until smooth and creamy.
- Take one-third of the whipped cream and gently fold it into the chocolate mixture.
- Add the remaining whipped cream and carefully fold until just combined.
- Spoon or pipe the mousse into individual serving dishes.
- Cover and refrigerate for at least 2-4 hours, preferably overnight.
- Garnish before serving with chocolate shavings or sugar-free chocolate chips.
Notes
Chill your bowl and beaters for better whipping. Use room temperature cream cheese and powdered sweetener for best results.
