Ingredients

  • 2 cups Heavy Whipping Cream, very cold, divided
  • 4 oz Cream Cheese, full-fat, softened
  • ½ cup Powdered Keto Sweetener
  • ⅓ cup Unsweetened Cocoa Powder
  • 1 ½ teaspoons Vanilla Extract
  • ¼ teaspoon Salt
  • ½ teaspoon Instant Espresso Powder (optional)
  • Sugar-Free Chocolate Chips or Shavings (optional, for garnish)

Instructions

  1. Pour 1 ½ cups of the very cold heavy whipping cream into a large, chilled bowl.
  2. Use an electric mixer to beat until stiff peaks form.
  3. Set aside.
  4. In a separate medium bowl, combine softened cream cheese, powdered sweetener, cocoa powder, vanilla extract, salt, and optional espresso powder.
  5. Add the remaining ½ cup of heavy whipping cream.
  6. Beat until smooth and creamy.
  7. Take one-third of the whipped cream and gently fold it into the chocolate mixture.
  8. Add the remaining whipped cream and carefully fold until just combined.
  9. Spoon or pipe the mousse into individual serving dishes.
  10. Cover and refrigerate for at least 2-4 hours, preferably overnight.
  11. Garnish before serving with chocolate shavings or sugar-free chocolate chips.

Notes

Chill your bowl and beaters for better whipping. Use room temperature cream cheese and powdered sweetener for best results.
