Description

Ingredients

  • 1 pound chicken, diced
  • 1 pound shrimp, peeled and deveined
  • 1 pound andouille sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 cups long-grain rice
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions, for garnish
  • Parsley, for garnish

Instructions

  1. Heat oil over medium heat in a large skillet. Add the chicken and sausage; cook until browned.
  2. Let the meat sear and develop color for about 4 to 6 minutes.
  3. Stir in the onion, bell pepper, celery, and garlic; cook until softened, about 5 minutes.
  4. Add diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper. Bring to a boil, stirring to distribute the rice evenly.
  5. Reduce heat, cover, and simmer for about 20 minutes until rice is cooked. Check once after 15 minutes to ensure the mixture is not sticking.
  6. Stir in shrimp, cover, and cook for an additional 5-10 minutes until shrimp are pink and cooked through.
  7. Serve hot, garnished with green onions and parsley.
