Description

A comforting slow-cooked soup made with Italian sausage, cannellini beans, and fresh spinach, perfect for family dinners.


Ingredients

  • 1 pound Italian sausage
  • 4 strips of bacon
  • 2 cups fresh spinach
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil (optional)

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. In the same pot, add the Italian sausage and cook until browned. Drain excess fat if necessary.
  3. Add the diced onion and garlic, cooking until the onion is translucent.
  4. Stir in the cannellini beans, spinach, chicken broth, and Italian seasoning. Bring to a simmer.
  5. Season with salt and pepper to taste.
  6. Reintroduce the bacon and let it simmer for about 10-15 minutes.
  7. Serve hot.

Notes

This soup can be stored in the refrigerator for up to three days. For longer storage, freeze it for up to three months.
