A comforting slow-cooked soup made with Italian sausage, cannellini beans, and fresh spinach, perfect for family dinners.

- 1 pound Italian sausage
- 4 strips of bacon
- 2 cups fresh spinach
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil (optional)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- In the same pot, add the Italian sausage and cook until browned. Drain excess fat if necessary.
- Add the diced onion and garlic, cooking until the onion is translucent.
- Stir in the cannellini beans, spinach, chicken broth, and Italian seasoning. Bring to a simmer.
- Season with salt and pepper to taste.
- Reintroduce the bacon and let it simmer for about 10-15 minutes.
- Serve hot.
Notes
This soup can be stored in the refrigerator for up to three days. For longer storage, freeze it for up to three months.
