Ingredients

  • 1 pound Italian sausage
  • 2 bell peppers (one red and one green), sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and set the rack in the middle.
  2. In a large skillet, cook the Italian sausage over medium heat until browned. Drain excess fat if needed.
  3. Add sliced bell peppers, onion, and garlic to the skillet, sauté until tender.
  4. Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Let simmer until thickened.
  5. Transfer the mixture to a casserole dish and top with shredded mozzarella cheese.
  6. Bake for 25-30 minutes, until cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.
