- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (10 oz) red enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 can (4 oz) diced green chilies
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F.
- Brown the ground beef with onion and garlic in a skillet.
- Drain excess fat and stir in taco seasoning.
- Spread a thin layer of enchilada sauce in a baking dish.
- Layer half the tortillas, beef mixture, cheese, and remaining sauce.
- Repeat layers, ending with cheese on top.
- Bake for 20-25 minutes until bubbly.
- Garnish with sour cream and cilantro before serving.
Notes
If you prefer a crisp edge, use a cast-iron dish or broil for the last minute. Leftovers can be stored in an airtight container for up to 4 days.
