A cozy, hearty lasagna soup made with bow tie pasta, perfect for family weeknight dinners.

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef or Italian sausage
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups bow tie pasta
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until fragrant.
- Add the ground beef or Italian sausage, cooking until browned. Drain excess fat if necessary.
- Stir in the crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring to a simmer.
- Add the bow tie pasta and cook until al dente, following package instructions.
- Serve hot, topped with ricotta and mozzarella cheese, garnished with fresh basil.
Notes
This soup tastes even better the next day. Can be made vegetarian by using plant-based meat substitutes or beans.
