Description

A cozy, hearty lasagna soup made with bow tie pasta, perfect for family weeknight dinners.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or Italian sausage
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups bow tie pasta
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until fragrant.
  3. Add the ground beef or Italian sausage, cooking until browned. Drain excess fat if necessary.
  4. Stir in the crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring to a simmer.
  5. Add the bow tie pasta and cook until al dente, following package instructions.
  6. Serve hot, topped with ricotta and mozzarella cheese, garnished with fresh basil.

Notes

This soup tastes even better the next day. Can be made vegetarian by using plant-based meat substitutes or beans.
