Description

These warm oatmeal bars are made with ripe bananas and strawberries, making for a comforting and healthy treat.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup mashed ripe bananas (or applesauce)
  • 1/4 cup maple syrup (optional)
  • 1 cup fresh or frozen strawberries, diced
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Mix rolled oats, mashed bananas (or applesauce), maple syrup, baking powder, and salt until well combined.
  3. Spread half of the oatmeal mixture in the bottom of the prepared pan, pressing it down evenly.
  4. Mix the strawberries with vanilla extract and layer them over the oatmeal base.
  5. Spread the remaining oatmeal mixture over the strawberries and gently press.
  6. Bake for 25-30 minutes or until the top is golden.
  7. Allow to cool before cutting into bars.

Notes

These bars are best served warm, and they keep well in an airtight container for up to five days. They can also be frozen for up to three months.
