Ingredients

- 1 cup rice
- 2 cups water or broth
- 1 lemon (zested and juiced)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 1/4 cup fresh herbs (such as parsley or dill)
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the rice and cook for another 2 minutes.
- Pour in the water or broth, lemon juice, lemon zest, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes.
- Remove from heat and let sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and stir in fresh herbs before serving.
Notes
Leftovers can be stored in an airtight container in the fridge. Reheat with a splash of water for best results.
