Description

A comforting side dish of fluffy rice infused with zesty lemon and fresh herbs, perfect for busy weeknights.


Ingredients

  • 1 cup rice
  • 2 cups water or broth
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1/4 cup fresh herbs (such as parsley or dill)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the rice and cook for another 2 minutes.
  4. Pour in the water or broth, lemon juice, lemon zest, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes.
  6. Remove from heat and let sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork and stir in fresh herbs before serving.

Notes

Leftovers can be stored in an airtight container in the fridge. Reheat with a splash of water for best results.
