Description

A comforting dish featuring golden seared chicken breasts served with creamy mashed potatoes and a luscious garlic gravy.


Ingredients

  • 4 boneless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat and sear the chicken until cooked through, about 6-7 minutes on each side.
  3. Remove chicken from skillet and keep warm.
  4. In the same skillet, add butter and garlic; sauté until fragrant.
  5. Sprinkle flour over the mixture and whisk to combine. Gradually pour in chicken broth and milk, stirring until gravy thickens. Season with salt and pepper.
  6. For the mashed potatoes, mix the mashed potatoes with cheese until melted and creamy. If the potatoes feel too thick, add a little milk and stir until you get the texture you like.
  7. To serve, place a generous scoop of mashed potatoes on a plate, top with seared chicken, and drizzle with garlic gravy. Garnish with extra cheese or chopped parsley if desired.

Notes

Leftovers can be stored separately for better texture. Reheat gravy gently; add milk to mashed potatoes if needed.
