- 12 ounces brown rice noodles
- 1 tablespoon neutral oil (such as avocado, olive, or refined coconut)
- 6 cloves garlic, minced
- 1/4–1/3 cup low sodium soy sauce or tamari
- 2 tablespoons veggie broth
- 1 1/2 tablespoons rice vinegar
- 2 tablespoons toasted sesame oil
- 1 tablespoon honey or maple syrup
- 2 tablespoons tahini
- 2 teaspoons sriracha
- 1/2 teaspoon ground ginger
Instructions
- Bring a large pot of water to a boil and cook the pasta according to package instructions. Drain and toss with a drop of oil to prevent sticking.
- Mince the garlic finely or use a garlic press and sauté in a pan with neutral oil until golden brown.
- Whisk together the remaining sauce ingredients in a bowl until smooth.
- Pour the sauce into the pan with the garlic and let simmer for 2-3 minutes until thickened.
- Combine the cooked noodles with the sauce, tossing until well coated.
- Garnish with scallions and serve hot.
Notes
For a richer finish, use real butter instead of oil. For a vegan version, substitute honey with maple syrup. Adjust soy sauce for gluten-free option by using tamari.
