- 1 pound baby potatoes, halved
- 1/2 cup butter
- 4 cloves garlic, minced
- 1 tablespoon dried thyme
- Salt and pepper to taste
- 1 cup beef broth
Instructions
- In a slow cooker, combine the beef stew meat and baby potatoes; spread them evenly.
- In a small saucepan, melt the butter over medium heat, then add the garlic and thyme. Cook until fragrant.
- Pour the garlic butter mixture over the beef and potatoes, ensuring the butter coats the meat.
- Add the beef broth, salt, and pepper; pour the broth around the edges.
- Stir everything together, cover the slow cooker, and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
- Serve warm, optionally topped with fresh parsley.
Notes
