Description

Tender and flavorful braised short ribs cooked in a slow cooker, perfect for a cozy dinner.


Ingredients

  • 4 bone-in English-cut short ribs
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth (or red wine)
  • 2 carrots, chopped
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Brown the short ribs in a hot skillet for about 5 minutes per side.
  2. Transfer the ribs to the crock pot.
  3. Sauté the onions and garlic in the same skillet without cleaning it.
  4. Add tomato paste and cook until darkened, then pour in broth (or wine) and scrape the bits from the bottom.
  5. Add the liquid to the crock pot along with carrots and spices.
  6. Cover and cook on low for 7-8 hours.
  7. Skim off excess fat before serving and adjust seasoning as needed.

Notes

Let the short ribs rest for a few minutes before serving to retain juices. Feel free to add a splash of vinegar or herbs to enhance flavor.
