- 4 bone-in English-cut short ribs
 - 1 large onion, chopped
 - 4 cloves garlic, minced
 - 2 tablespoons tomato paste
 - 4 cups beef broth (or red wine)
 - 2 carrots, chopped
 - Salt and pepper, to taste
 - 1 teaspoon dried thyme
 - 1 bay leaf
 
Instructions
- Brown the short ribs in a hot skillet for about 5 minutes per side.
 - Transfer the ribs to the crock pot.
 - Sauté the onions and garlic in the same skillet without cleaning it.
 - Add tomato paste and cook until darkened, then pour in broth (or wine) and scrape the bits from the bottom.
 - Add the liquid to the crock pot along with carrots and spices.
 - Cover and cook on low for 7-8 hours.
 - Skim off excess fat before serving and adjust seasoning as needed.
 
Notes
Let the short ribs rest for a few minutes before serving to retain juices. Feel free to add a splash of vinegar or herbs to enhance flavor.
