- 4 large eggs
- 1/2 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
- 1/2 cup chocolate ganache
- Fresh cherries for garnish
- Chocolate curls for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and line a 15×10-inch jelly roll pan with parchment paper.
- In a large mixing bowl, beat the eggs and granulated sugar until pale and fluffy.
- Sift in cocoa powder, baking powder, and salt. Gently fold until combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Prepare a clean kitchen towel by dusting it with powdered sugar.
- Once the cake is done, turn it out onto the towel and carefully roll it up. Let it cool completely.
- For the filling, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Unroll the cooled cake and spread the whipped cream evenly over it.
- Spoon cherry pie filling over the whipped cream.
- Roll the cake back up gently and place seam side down.
- Drizzle with chocolate ganache and garnish with fresh cherries and chocolate curls.
- Slice and serve chilled.
Notes
Use fresh eggs at room temperature for a lighter crumb. If you prefer a less sweet filling, choose a lighter cherry compote instead of heavy pie filling.
