Description

A timeless and tender rolled cake filled with whipped cream and cherry pie filling, perfect for celebrations or a cozy dessert at home.


Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 1/2 cup chocolate ganache
  • Fresh cherries for garnish
  • Chocolate curls for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line a 15×10-inch jelly roll pan with parchment paper.
  3. In a large mixing bowl, beat the eggs and granulated sugar until pale and fluffy.
  4. Sift in cocoa powder, baking powder, and salt. Gently fold until combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 12-15 minutes or until a toothpick comes out clean.
  7. Prepare a clean kitchen towel by dusting it with powdered sugar.
  8. Once the cake is done, turn it out onto the towel and carefully roll it up. Let it cool completely.
  9. For the filling, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  10. Unroll the cooled cake and spread the whipped cream evenly over it.
  11. Spoon cherry pie filling over the whipped cream.
  12. Roll the cake back up gently and place seam side down.
  13. Drizzle with chocolate ganache and garnish with fresh cherries and chocolate curls.
  14. Slice and serve chilled.

Notes

Use fresh eggs at room temperature for a lighter crumb. If you prefer a less sweet filling, choose a lighter cherry compote instead of heavy pie filling.
