- 4 pieces Chicken Breasts (or chicken thighs)
- 4 tablespoons Butter
- 4 cloves Minced Garlic
- 2 teaspoons Smoked Paprika
- 3 tablespoons Soy Sauce
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 medium Onion
- 8 ounces Button Mushrooms
- 1 cup Monterey Jack Cheese
- 2 tablespoons Olive Oil
- 2 tablespoons Lemon Juice
- 1 tablespoon Worcestershire Sauce
Instructions
- Trim excess fat from chicken breasts and pat dry.
- Slice the onion and mushrooms, and mince the garlic.
- Rub chicken breasts with smoked paprika, salt, and black pepper.
- Optional: Sear chicken in a skillet with olive oil for 2 minutes per side for color.
- Combine soy sauce, Worcestershire sauce, lemon juice, and minced garlic in a bowl.
- Layer half of the onions and mushrooms in the slow cooker.
- Place chicken on top, pour sauce over, and add remaining onions and mushrooms.
- Dot with remaining butter and drizzle with olive oil.
- Cover and cook on low for 4-5 hours or high for 2.5-3 hours.
- About 15 minutes before serving, sprinkle Monterey Jack cheese over chicken.
- Adjust sauce thickness if needed, then let chicken rest for 5 minutes before serving.
Notes
Serve over mashed potatoes, rice, or buttery noodles for a comforting meal. Store leftovers in an airtight container in the refrigerator for up to 4 days.
