Description

Ingredients

  • 4 pieces Chicken Breasts (or chicken thighs)
  • 4 tablespoons Butter
  • 4 cloves Minced Garlic
  • 2 teaspoons Smoked Paprika
  • 3 tablespoons Soy Sauce
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 medium Onion
  • 8 ounces Button Mushrooms
  • 1 cup Monterey Jack Cheese
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Worcestershire Sauce

Instructions

  1. Trim excess fat from chicken breasts and pat dry.
  2. Slice the onion and mushrooms, and mince the garlic.
  3. Rub chicken breasts with smoked paprika, salt, and black pepper.
  4. Optional: Sear chicken in a skillet with olive oil for 2 minutes per side for color.
  5. Combine soy sauce, Worcestershire sauce, lemon juice, and minced garlic in a bowl.
  6. Layer half of the onions and mushrooms in the slow cooker.
  7. Place chicken on top, pour sauce over, and add remaining onions and mushrooms.
  8. Dot with remaining butter and drizzle with olive oil.
  9. Cover and cook on low for 4-5 hours or high for 2.5-3 hours.
  10. About 15 minutes before serving, sprinkle Monterey Jack cheese over chicken.
  11. Adjust sauce thickness if needed, then let chicken rest for 5 minutes before serving.

Notes

Serve over mashed potatoes, rice, or buttery noodles for a comforting meal. Store leftovers in an airtight container in the refrigerator for up to 4 days.
