Description

A comforting and flavorful chicken soup that evokes memories of home and family gatherings.


Ingredients

  • 2 chicken breasts, poached and shredded
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup green beans, chopped
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a little oil over medium heat.
  2. Add onions and garlic, and sauté until fragrant, about 3-5 minutes.
  3. Add diced carrots and celery, cooking until slightly softened.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the shredded chicken, green beans, thyme, rosemary, salt, and pepper.
  6. Stir to combine, then lower the heat and let the soup simmer for about 20-30 minutes until vegetables are tender.
  7. Garnish with fresh parsley before serving.

Notes

Use real butter for the best flavor. This soup tastes even better the next day.
