- 2 chicken breasts, poached and shredded
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup green beans, chopped
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat a little oil over medium heat.
- Add onions and garlic, and sauté until fragrant, about 3-5 minutes.
- Add diced carrots and celery, cooking until slightly softened.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken, green beans, thyme, rosemary, salt, and pepper.
- Stir to combine, then lower the heat and let the soup simmer for about 20-30 minutes until vegetables are tender.
- Garnish with fresh parsley before serving.
Notes
Use real butter for the best flavor. This soup tastes even better the next day.
