A simple, cozy, and nutritious vegetable soup that cooks effortlessly in a slow cooker.
Ingredients

- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 potatoes, diced (Russet, Yukon, or red)
- 1 can diced tomatoes
- 2 cups frozen mixed vegetables (peas, corn, green beans)
- 4 cups vegetable broth
- 1 tsp thyme
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 handful spinach or kale (optional)
Instructions
- Layer onion, carrots, celery, and potatoes at the bottom of the slow cooker.
- Add canned tomatoes and frozen vegetables on top.
- Pour in vegetable broth and sprinkle with herbs and spices.
- Cover and cook on low for 6-8 hours.
- Taste and adjust seasoning before serving.
- Add spinach or kale in the last hour of cooking, if desired.
Notes
Feel free to improvise with any vegetables you have on hand. For added flavor, consider adding a dollop of pesto or a rind of parmesan before serving.
