Description

A simple, cozy, and nutritious vegetable soup that cooks effortlessly in a slow cooker.


Ingredients

Scale
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 potatoes, diced (Russet, Yukon, or red)
  • 1 can diced tomatoes
  • 2 cups frozen mixed vegetables (peas, corn, green beans)
  • 4 cups vegetable broth
  • 1 tsp thyme
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 handful spinach or kale (optional)

Instructions

  1. Layer onion, carrots, celery, and potatoes at the bottom of the slow cooker.
  2. Add canned tomatoes and frozen vegetables on top.
  3. Pour in vegetable broth and sprinkle with herbs and spices.
  4. Cover and cook on low for 6-8 hours.
  5. Taste and adjust seasoning before serving.
  6. Add spinach or kale in the last hour of cooking, if desired.

Notes

Feel free to improvise with any vegetables you have on hand. For added flavor, consider adding a dollop of pesto or a rind of parmesan before serving.
