Description

A comforting and creamy pasta dish made with ground beef, cream cheese, ranch seasoning, and cheddar cheese, all cooked conveniently in a slow cooker.


Ingredients

  • 1 lb ground beef
  • 8 oz cream cheese, cubed
  • 1 (1 oz) packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 cups beef broth
  • 12 oz rotini or penne pasta
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. In a skillet, brown ground beef over medium heat. Drain any excess fat.
  2. Transfer beef to crockpot. Add cream cheese, ranch seasoning, cheddar, sour cream, and beef broth. Stir gently.
  3. Cover and cook on LOW for 3–4 hours, stirring once or twice if possible.
  4. In the last 30–40 minutes, stir in uncooked pasta. Cover and continue cooking until pasta is tender, about 30–40 minutes.
  5. Stir well before serving. Garnish with green onions or parsley if desired.

Notes

This dish can easily be adapted with different types of pasta and added vegetables. For leftovers, store in an airtight container for up to 3 days.
