- 1 lb juicy chicken (breast or thighs)
- 8 oz egg noodles
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened.
- Stir until the onions turn golden and you smell the vegetables sweeten.
- Add the minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a boil.
- Add the chicken pieces, thyme, and parsley. Reduce heat and let it simmer until the chicken is cooked through, about 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the egg noodles and cook until tender, about 5-7 minutes.
- Season with salt, pepper, and a squeeze of lemon juice before serving.
