Description

A quick and flavorful one-pot Italian beef recipe made in the Instant Pot, perfect for easy weeknight dinners.


Ingredients

  • 2 lb chuck roast
  • 1 cup beef broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp cracked black pepper
  • 1 jar sliced pepperoncini (with juice)
  • 1 jar roasted red peppers
  • Optional: splash of Worcestershire sauce
  • Hoagie rolls for serving

Instructions

  1. Place the chuck roast in the Instant Pot.
  2. Add Italian seasoning, salt, black pepper, beef broth, pepperoncini (with juice), and roasted red peppers.
  3. Seal the lid, set to high pressure, and cook for about 90 minutes, including natural pressure release.
  4. Once finished, shred the beef with forks and serve on crusty bread or use for other dishes.

Notes

For best results, use a well-marbled chuck roast and ensure to let the pressure release naturally for tender meat.
