Description
A nourishing and gentle detox veggie broth that’s easy to make and packed with flavor, using simple ingredients.
Ingredients
Scale
- Chopped onions
- Chopped carrots
- Chopped celery
- A handful of greens (spinach, kale, parsley)
- Smashed garlic cloves
- A block of ginger (thumb-size)
- Sea salt and pepper, to taste
- Handful of dried mushrooms (optional)
- 1 bay leaf (optional)
Instructions
- Place all ingredients into the crock pot.
- Fill with water.
- Set the crock pot to cook for 8 hours.
- Optionally strain the veggies and enjoy just the broth, or consume with the vegetables for added fiber.
- Add a squeeze of lemon before serving for extra brightness.
Notes
Add quinoa or white beans at the end for a more filling soup. Great for hydration and comforting on cold days.
