A comforting and crowd-pleasing tater tot breakfast bake that’s perfect for Christmas morning. Easy to prepare in a crockpot for a stress-free holiday breakfast.

- 1 bag of tater tots
- 1 pound sausage (or bacon/ham)
- 1 cup diced onions (optional)
- 1 cup diced peppers (optional)
- 6 eggs
- 1/2 cup milk
- 1 cup shredded cheese
- Sliced scallions or fresh parsley (for garnish)
- Sour cream (optional, for serving)
- Fresh fruit or applesauce (for serving)
- Hot sauce or salsa (for serving)
Instructions
- Layer half of the tater tots in the bottom of the crockpot.
- Add a layer of cooked sausage (or bacon/ham) and optional diced onions and peppers.
- Top with another layer of tater tots.
- In a bowl, whisk together eggs and milk, then pour evenly over the tater tot layers.
- Sprinkle with cheese, reserving some for the top.
- Cover and cook on LOW for 4-5 hours, or on HIGH for 2.5-3 hours, until set.
- Add reserved cheese during the last 30 minutes of cooking, if desired.
- Serve topped with sliced scallions or parsley and a dollop of sour cream.
Notes
Can be prepared the night before and cooked in the morning. Avoid opening the crockpot lid too frequently to ensure even cooking.
