Description

A comforting slow cooker soup filled with ground beef, potatoes, and creamy broth, perfect for busy evenings.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Garlic powder to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain excess fat and transfer to the crockpot.
  2. Add potatoes, onion, carrots, and celery to the crockpot.
  3. Pour in beef broth and season with salt, pepper, and garlic powder. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours, or high for 4-5 hours.
  5. About 30 minutes before serving, stir in heavy cream and cheddar cheese.
  6. Allow to heat through, then serve hot.

Notes

For a lighter flavor, use low-sodium broth. Adjust seasoning at both the start and end of cooking.
