- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups beef or chicken broth
- 1 cup rice
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, avocado, cilantro
Instructions
- In a skillet, brown the ground beef or turkey with the chopped onion until cooked through. Drain excess fat.
- Transfer the cooked meat mixture to the slow cooker, scraping all browned bits from the pan into the slow cooker for extra flavor.
- Add the black beans, corn, diced tomatoes, taco seasoning, broth, and rice to the slow cooker. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender.
- Season with salt and pepper to taste. Serve with your favorite toppings.
Notes
For a thicker texture, cook an hour longer on low. If you prefer a lighter taste, use chicken broth instead of beef broth. Add chopped jalapeno for extra heat.
