Description

A comforting and flavorful dish combining chicken, smoked sausage, and rice slow-cooked to perfection.


Ingredients

  • 1 lb chicken, diced
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes
  • 3 cups chicken broth
  • 1 cup rice
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. In a Crock Pot, combine chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, stir the jambalaya and check seasoning.
  5. Serve hot, garnished with green onions if desired.

Notes

Use real butter for flavor. Homemade chicken broth enhances taste. Adjust cooking time for brown rice.
