Ingredients

- 1 lb chicken, diced
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes
- 3 cups chicken broth
- 1 cup rice
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a Crock Pot, combine chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, stir the jambalaya and check seasoning.
- Serve hot, garnished with green onions if desired.
Notes
Use real butter for flavor. Homemade chicken broth enhances taste. Adjust cooking time for brown rice.
