Description

A cozy and hearty chicken tortilla soup made effortlessly in a slow cooker, bursting with flavors and topped with your favorite garnishes.


Ingredients

Scale
  • 1.5 lbs chicken (thighs or breasts)
  • 1 can crushed tomatoes
  • 1 can corn
  • 1 can black beans
  • 1 can green chiles
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 3 corn tortillas, shredded
  • Toppings: avocado, cheese, cilantro, sour cream, lime

Instructions

  1. Place chicken, tomatoes, corn, beans, onion, and garlic in the crock pot.
  2. Pour in chicken broth and add spices. Mix well.
  3. Cook on LOW for 4 hours.
  4. Shred the chicken and stir it back into the soup.
  5. Add shredded corn tortillas and cook for an additional 10 minutes.
  6. Serve hot with desired toppings.
