Ingredients

- 1.5 lbs chicken (thighs or breasts)
- 1 can crushed tomatoes
- 1 can corn
- 1 can black beans
- 1 can green chiles
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt and pepper to taste
- 3 corn tortillas, shredded
- Toppings: avocado, cheese, cilantro, sour cream, lime
Instructions
- Place chicken, tomatoes, corn, beans, onion, and garlic in the crock pot.
- Pour in chicken broth and add spices. Mix well.
- Cook on LOW for 4 hours.
- Shred the chicken and stir it back into the soup.
- Add shredded corn tortillas and cook for an additional 10 minutes.
- Serve hot with desired toppings.
Notes
This soup is flexible; feel free to swap ingredients based on your pantry! Can easily be made vegetarian by substituting chicken with extra beans or veggies.
