- 1 pound beef, thinly sliced
- 1 cup bell peppers, sliced
- 1 cup onions, sliced
- 1 cup mushrooms, sliced
- 20 ounces cheese tortellini, fresh or frozen
- 2 cups beef broth
- 1 cup cream cheese
- 1 cup shredded provolone cheese
- Salt and pepper to taste
Instructions
- In a slow cooker, combine the sliced beef, bell peppers, onions, and mushrooms. Stir to mix.
- Add the beef broth and cream cheese, stirring to combine.
- Cover and cook on low for 6-8 hours or until the beef is tender.
- About 30 minutes before serving, add the tortellini and cook until tender.
- Stir in the shredded provolone cheese and let it melt.
- Season with salt and pepper to taste before serving.
