Description

A comforting slow cooker recipe that transforms tough beef into tender, flavorful slices, served over egg noodles with a creamy mushroom gravy.


Ingredients

  • 1 pound beef stew meat
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • 1 cup sour cream
  • Chopped parsley for garnish

Instructions

  1. In the crock pot, combine the beef, onion, garlic, cream of mushroom soup, beef broth, Worcestershire sauce, salt, and pepper. Add everything in simple layers, pushing the beef down to catch the juices.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  3. About 30 minutes before serving, cook the egg noodles according to package instructions. Salt the boiling water well and cook until just tender, then drain and set aside to keep warm.
  4. Stir in the sour cream into the beef mixture until well combined.
  5. Serve the beef stroganoff over the egg noodles and garnish with chopped parsley.

Notes

Leftovers can be stored in an airtight container for up to 3 days. To reheat, gently warm on the stovetop with a splash of beef broth.
