- 4 chicken breasts
- 1 packet Italian dressing mix
- 1 can cream of chicken soup
- 8 oz cream cheese
- 1 lb angel hair pasta
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh parsley for garnish
Instructions
- Place the chicken breasts in the crock pot.
- Set them in a single layer if possible so they cook evenly.
- Give them a quick pat with paper towel if they are extra wet.
- In a bowl, mix together the Italian dressing mix, cream of chicken soup, and cream cheese until smooth.
- Warm the cream cheese a little if it resists; a microwave for 15 seconds helps.
- Stir until the mixture looks uniform and glossy.
- Pour the mixture over the chicken in the crock pot.
- Spoon it around so each breast gets a bit of sauce on top.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
- Before serving, cook the angel hair pasta according to package instructions.
- Serve the chicken and sauce over the pasta.
- Sprinkle with Parmesan cheese and garnish with fresh parsley.
Notes
If the sauce seems too thin, let it cook uncovered for 15-30 minutes on high. For a silkier finish, blend part of the sauce with an immersion blender before shredding the chicken.
