Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: Freshly ground black pepper and extra cheddar for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Stir in the minced garlic and garlic powder, cooking for just 1 minute until fragrant. Then, add the orzo pasta and toast it for another 1-2 minutes.
  3. Pour in the vegetable or chicken broth, and bring the mixture to a boil. Once boiling, reduce to a simmer. Add your broccoli florets, cover the pot, and allow everything to cook for 8-10 minutes, stirring occasionally to keep it all combined.
  4. Once the orzo is tender, remove the pot from heat. Stir in the heavy cream and shredded cheddar cheese until the mixture is creamy and well combined.
  5. Season your dish with salt and pepper to taste. If desired, garnish with extra cheddar and freshly ground black pepper. Serve warm and enjoy the comforting flavors.

For a creamier texture, stir gently to avoid clumping. If using frozen broccoli, slightly adjust cooking time.
