- 2 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 (8 ounce) package cream cheese, cubed
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, drained and chopped
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for slurry)
Instructions
- Place the chicken breasts in the bottom of your slow cooker.
- In a separate bowl, whisk together the chicken broth, cream cheese cubes, heavy cream, Parmesan cheese, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper until mostly combined.
- Pour the sauce mixture evenly over the chicken in the slow cooker.
- Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
- Remove the chicken breasts and shred them using two forks.
- Stir the cornstarch slurry into the sauce in the slow cooker.
- Cook on HIGH for 10 to 15 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
- Serve the creamy Parmesan slow cooker chicken immediately over pasta, rice, or mashed potatoes.
Notes
Leftovers can be stored in the fridge for up to 3 days and freeze well for up to 3 months. Reheat gently to maintain sauce consistency.
